Description
Whole bunch in plastic tanks for 10 days.
After foot stomping, the grapes are placed in barrels for a 9-day fermentation period.
After a 9-day fermentation period, the grapes were put into barrels and aged in barrels for 11 months.
Bottled with a 5% blend of our own Merlot at bottling time.
Wild yeast, no sulfites.
The nose is light and fresh with cherry and raspberry aromas, but on the palate, the 5% Merlot is balanced with pleasant tannins.
The 5% Merlot adds pleasant tannins and good structure to the palate, a balance that I personally love.
It has the charm of Kyoho grapes, but is not at all cloying, making it a perfect match for a variety of dishes.
It is a wine that is easy to pair with a variety of foods.
