Description
MIYABI has a slightly purplish garnet color, black fruits such as black cherries, spices such as octagon and cinnamon, and aromas of herbs such as basil and mint. It also has a delicate aroma and taste that will evolve over several years. As the name suggests, this red wine has a bewitching and graceful finish.
The varietals are Dornfelder and Merlot.
As in the previous year, the Dornfelder grapes were heavily damaged by wasps, and about 1/3 of the grapes could not be harvested.The Dornfelder grapes (whole bunch & destemmed) were harvested first and fermented with natural yeasts in semi-maceration carbonic, with the Merlot grapes harvested and destemmed later added (about 3 weeks MC).The juice is pressed by pneumatic press, fermented in stainless steel tanks for 2 months, and aged in old oak barrels.
Dornfelder whole bunch & de-stemmed, Merlot de-stemmed, semi-maceration in poly tanks, carbonic fermentation, 9 months in old oak barrels, some aging in stainless tanks. Unfined and unfiltered.
