All of the Pinot Noir was de-stemmed using a simple hand-cranked machine. However, due to the high temperature and long harvest season, fermentation proceeded quite quickly. The grapes were pressed using a horizontal mechanical press, racked, and then barreled. The proportion of new barrels was about 20%.
